NUA’s Story

Behind the microbial magic

Ann’s story started out in Northern Ireland where she was born and bred. Her life story then took on many a journey and adventure. She completed her PhD (in Industrial Chemistry) at the University of St Andrews, but then went further afield to South Africa where she started her 15 year corporate journey in technology development and scale up. In 2015 she returned back to her roots to be near her family but continued her technology development journey at Queen’s university.

Her journey took a bit of a twist, in 2017, when she was diagnosed with MS. This was a signal that major lifestyle and diet changes were needed to chart a path to recovery and optimum health not only for herself but for her loved ones. Her passion for good health, sharing knowledge, some chemistry and a little South African secret saw the birth of NUA (Tùs Nua, Irish for “New Beginnings”).

Ann currently lives in County Antrim with her husband and son, where she carefully brews, bottles and tests our Kombucha. She is constantly identifying new flavours and combinations, as well as developing her microbial and chemical knowledge of NUA Kombucha.

Health Benefits

Kombucha has been used for thousands of years in Asia and Russia. Similar to the other Fermented foods, the bacteria in Kombucha is thought to support gut health. Gut health is closely linked with mental health as our “second brain.” The products of the fermentation are also thought to have additional health benefits, ranging from the organic acids (gut repair) to energising (B Vitamins).

In addition to the products of fermentation mentioned above, Rooibos also comes with its own unique set of properties, which have been known and applied for decades in South Africa, but more recently scientifically studied.

Rooibos (Aspalathus linearis), meaning ‘red bush’; is a member of the plant family Fabaceae that grows in South Africa’s fynbos (natural shrubland vegetation located in the Cape provinces of South Africa). Rooibos tea does not contain caffeine and has low tannin levels compared to black tea or green tea. Rooibos is also known for being rich in flavonoid antioxidants, most notably aspalathin, which is not often found in other plants

The potential health benefits of Rooibos are well documented and these are largely attributed to the caffeine free nature and high concentration of flavanoid anti-oxidants contained within Rooibos.
